• OMOTENASHI (おもてなし) – The Most Respectful and Wholehearted Hospitality
I believe one of the most important things in our job is the OMOTENASHI mindset, which in Japan describes the highest hospitality level one can provide to a guest. A standard of service that surpasses the ordinary. Yet it is determined by each individual’s aspirations and motivations to learn and perform beyond the guidelines.
OMOTENASHI is about a personalized hospitality from the bottom of one’s heart that begins even before a guest arrives and does not end after a guest has left the premises – This requires that the entire team gets united as a team to accomplish this task to perfect on a daily basis.
Omotenashi is Japanese hospitality. “Omote” means public face – an image you wish to present to outsiders. “Nashi” means nothing. Combining them means every service is from the bottom of the heart – honest, no hiding, no pretending.
There is no surprise, then, that the spirit has its root in tea ceremony where tea masters face the audiences and make tea in front of them. Everything is open and clear. The idea is also largely defined by the poem by respectable tea master Sen no Rikyu:
“Though you wipe your hands and brush off the dust and dirt from the vessels, what is the use of all this fuss if the heart is still impure?”
Omotenashi, therefore, does not ask for flawless skills, but a pure heart – which leads back to these keywords: serve wholeheartedly.
• ICHIGO ICHIE (一期一会) - The Spirit of the Only Opportunity to Offer Our Service
ICHIGO ICHIE is one of the concepts of the tea ceremony that literally translates as “the only ceremony to attend in one’s life time.” – explaining the importance of each opportunity of hospitality which will never repeat.
Each particular guest that walks in will be treated by this ICHIGO ICHIE code. We will work as impeccably as possible with the sincerest attitude of OMOTENASHI every single time as if it is our last opportunity, so our service is as satisfying and memorable as it can possibly be or beyond that.
ICHIGO ICHIE is both an individual and a whole team aspiration, even for the staff members that never have direct contact with a guest, ICHIGO ICHIE unifies us all, keeping everyone motivated to pursue and meet the OMOTENASHI.
• ARIGATO GOZAIMASU (ありがとうございます。) - The Most Important Word in Hospitality
ARIGATO GOZAIMASU is the word of appreciation. It is the fundamental of the hospitality. However wonderful the service we can accommodate, however delicious food we can provide, it is no use if there was no one to receive them. It is implying that “Because you accept to receive our service and meal, we can have this opportunity to perform our best.” The word ARIGATO is from “arigatai“ which means “(a) rare (thing/occasion)” So when we appreciate this rare occasion to perform the job, now you call it hospitality. You may think it is a daily routine, but you have to realize that each day is a different day from the others, especially for the guests. When even serving to the regular same guest(s), it is definitely not the same experience each time when striving to make it better each day. It is for the both of service givers and receivers.
